Winery

Avaler is collaboration between two friends, Dylan Sheldon and Jon Phillips, who believe delicious wines should be on your dinner table every night, and should be of high quality but reasonably priced. With winemaking production experience starting in his early teens and winery work in France, Australia, New Zealand and California, winemaker (and Sheldon Wines owner) Dylan Sheldon brings an adventurous and creative attitude to this collaborative project. Owner of Inspiration Cellars, Jon Phillips brings a lifelong interest in food, flavors and aromas to the partnership, and his previous winery experience and ownership of his Inspiration Cellars, founded in 2002.

Grapelive: “I highly recommend exploring this Avaler label. They offer more than most high-production wines in this price class.” The winery produces currently 1000 cases a year, aiming for 2,000 per year of each varietal, and is located in Santa Rosa.

Winemaking

Stylistically, the wines are ideally designed for restaurant by the glass and wine pairing programs, intended to be delicious to drink on release, and at a superb value price. The reds are fermented in small open top bins, punched-down by hand 3 to 4 times a day, gently pressed and aged in a mix of roughly 20-30% new Oak, enough to frame and season without dominating the fruit. Whites are cold-fermented in stainless, and the Chardonnay is aged in French oak after fermentation. The bottles are “topless” to eliminate foils and the necessity of cutting them in a busy service program.

Vineyards

The vineyards are all farmed sustainably while some organically and others Biodynamically. Covercrops are used for natural soil amendments, and they do not permit Round-Up to be used in any of their vineyards.

Winemaker Notes:
“Gorgeously perfumed with crowd pleasing notes of Rainier cherry, Italian plum, wild strawberry and black tea. Supple tannins and nicely proportioned texture emerge from the slow cool whole berry fermentation, finishing with a touch of earth and truffle.”  Aged in 80% Neutral and 20% new french oak for 8 months. This is a blend from two single vineyard sites, with Calera clone representing the Russian River Valley 60%, and 40% Pommard clone from the Sonoma Coast.” Bottled unfined and unfiltered. 125 cases.

Cabernet Sauvignon, Dry Creek Valley 2017
Winemaker’sNotes:
“Visually, this wine displays a dark crimson hue with good clarity. Aromatics lead off with sun warmed blackberries, cassis, and dark plums. Secondary notes of cedar shavings, rock dust, and a touch of black tea are followed by juicy red currants, dark cacao, and Bing cherries. Medium-full bodied, supple and generous on the palate with nice tannin integration. This is a luscious, opulent, and well-rounded expression of Cabernet Sauvignon, that delivers great food pairing versatility and cellaring ability.”

This third Cabernet vintage released by Avaler, shows their goal of producing high quality, single- appellation wines at a remarkably reasonable price. Not an overly extracted style, yet shows the full spectrum of varietal flavors and depth. It delivers loads of pleasure for the price. This 90% Cabernet Sauvignon (farmed organically) is blended with 10% Merlot and opens with air to reveal dense and pure dark fruit aromas of blueberry, cassis, graphite and mocha and flavors of cedar, star anise and dried rose nuances within an intense structure. Fermented in open-top tanks then aged for 28 months in 25% new French Oak and 75% neutral French oak. Unfined. 200 cases.
