Avaler in French means to consume with great enthusiasm, as in gulp, swig, chug or devour


Avaler is collaboration between two friends, Dylan Sheldon and Jon Phillips, who believe delicious wines should be on your dinner table every night, and should be of high quality but reasonably priced. With winemaking production experience starting in his early teens and winery work in France, Australia, New Zealand and California, winemaker (and Sheldon Wines owner) Dylan Sheldon brings an adventurous and creative attitude to this collaborative project. Owner of Inspiration Cellars, Jon Phillips brings a lifelong interest in food, flavors and aromas to the partnership, and his previous winery experience and ownership of his Inspiration Cellars, founded in 2002.

Grapelive: “I highly recommend exploring this Avaler label. They offer more than most high-production wines in this price class.” The winery produces currently 1000 cases a year, aiming for 2,000 per year of each varietal, and is located in Santa Rosa.


Stylistically, the wines are ideally designed for restaurant by the glass and wine pairing programs, intended to be delicious to drink on release, and at a superb value price. The reds are fermented in small open top bins, punched-down by hand 3 to 4 times a day, gently pressed and aged in a mix of roughly 20-30% new Oak, enough to frame and season without dominating the fruit. Whites are cold-fermented in stainless, and the Chardonnay is aged in French oak after fermentation. The bottles are “topless” to eliminate foils and the necessity of cutting them in a busy service program.


The vineyards are all farmed sustainably while some organically and others Biodynamically. Covercrops are used for natural soil amendments, and they do not permit Round-Up to be used in any of their vineyards.

Winery Notes: “Crowd pleasing and modern with Syrah leading off with aromatics of boysenberry and Bing cherry compote, followed by barrel aged nuances of lush hazelnut-milk chocolate. Grenache brings red vine licorice and hibiscus while Viogner is the liaison and lends itself to the plush texture and silky finish. 40% Syrah Brandley Vineyard, 40% Grenache Noir Ceja Farms, 20% Viognier Canihan Vineyard (Biodynamic).”

The red wines were open top fermented, pressed to barrel. Aged for 17 months in 30% new French oak and 70% neutral oak barrels. The Viognier component was fermented and aged in stainless steel. Unfined and Unfiltered. 125 cases

The second vintage released by Avaler, showing their goal of producing high quality, single-appellation wines at a remarkably reasonable price. Not an overly extracted style, yet shows the full spectrum of varietal flavors and depth. It delivers loads of pleasure for the price. This 95% Cabernet Sauvignon is blended with 5% Merlot and opens with air to reveal dense and pure dark fruit aromas of blueberry, cassis, graphite and mocha and flavors of cedar, star anise and dried rose nuances within an intense structure. Fermented in open-top tanks then aged for 28 months in 20% new French Oak and 80% neutral oak. 300 cases.
